Method

Crush the toasted sesame seeds until coarse. Mix them with the all-purpose flour, anise seeds, cinnamon powder, saffron threads, and baking powder.

Add the unsalted butter, egg, orange blossom water, distilled white vinegar, and water. Mix until a firm but workable dough forms, then let it rest.

Roll out the dough, cut it into strips, and shape the strips into traditional flower-like folds.

Heat the vegetable oil to 180°C (355°F). Fry the shaped pastries until deep golden and crisp, then drain well.

Warm the honey gently until fluid. Dip the hot pastries in the honey and let the excess drip off.

Arrange the pastries on a tray and finish with the sesame seeds.
