- 700mlMeat Stock
- 250mlCoconut Milk

Heat the vegetable oil in a pot over medium heat, then cook the onion until softened.

Add the garlic and stir briefly, then add the pumpkin, meat stock, fresh thyme, salt, and black pepper.

Bring to a gentle simmer at about 95°C (203°F) and cook until the pumpkin is very soft.

Remove the fresh thyme and blend the soup until smooth.

Return the soup to the pot, stir in the coconut milk, and warm it gently to about 85°C (185°F) without boiling.
