Mussels
- 1kgMussel (scrubbed and debearded)
Sauce
- 40mlExtra Virgin Olive Oil
- 15gGarlic (finely chopped)
- 200gTomato (finely chopped)
- 150mlWhite Dry Wine
- 100mlWater
- 4gSalt
- 2gBlack Pepper

Method

Rinse the mussel well under cold water and discard any that stay open when tapped.

Heat the extra virgin olive oil in a wide pot over medium heat.

Add the garlic and cook gently until fragrant without letting it brown.

Add the tomato and cook until it softens and begins to break down.

Pour in the white dry wine and water, then bring the sauce to a simmer.

Add the mussel, cover the pot, and cook until the shells open.

Season the sauce with salt and black pepper.

Scatter the fresh parsley over the mussels and serve immediately. Discard any mussels that do not open during cooking.
