- 3gBlack Pepper
- 40gUnsalted Butter
- 600gPotato (peeled and cut into chunks)
- 15gGarlic (crushed)
- 5gFresh Rosemary
- 1lWhole Milk

Method

Preheat the oven to 170°C (340°F).

Season the lamb shoulder all over with salt and black pepper.

Melt the unsalted butter in a heavy roasting pan over medium heat and brown the lamb on all sides.

Arrange the potato, garlic, and fresh rosemary around the lamb.

Pour in the whole milk and bring it just to a gentle simmer on the stove.

Transfer the pan to the oven and bake until the lamb is very tender and the milk has reduced into a lightly curdled savory sauce.
