Soup
- 30mlExtra Virgin Olive Oil
- 150gOnion (finely chopped)
- 10gGarlic (crushed)
- 6gPaprika
- 40gTomato Paste
- 1.5lFish Stock
- 300mlWater
- 2pcsBay Leaf
- 800gSea Bass (cut into large pieces)
- 10gSalt
- 3gBlack Pepper

- 20gFresh Parsley (finely chopped)
- 1pcsLemon (cut into wedges)

Method

Heat the extra virgin olive oil in a pot over medium heat.

Add the onion and cook until soft.

Stir in the garlic and paprika and cook briefly until fragrant.

Add the tomato paste and stir until it darkens slightly.

Pour in the fish stock and water, then add the bay leaves and bring the soup to a gentle boil.

Lower the heat, add the sea bass, and simmer gently until the fish is just cooked and flakes easily, until it flakes easily and reaches 63°C (145°F).

Season the soup with salt and black pepper, then remove the bay leaves.

Finish with fresh parsley and serve with lemon on the side.
