Method
Follow each step in order. Ingredient names are highlighted as you go.

Whisk the chickpea flour and salt together in a bowl. Slowly pour in the water and whisk until the batter is smooth.

Stir in most of the extra virgin olive oil and let the batter rest so the flour hydrates fully.

Place a heavy ovenproof pan in the oven and preheat to 240°C (465°F).

Carefully remove the hot pan, coat it with the extra virgin olive oil, and pour in the batter.

Bake until the socca is set, deeply golden at the edges, and lightly blistered on top.

Finish with the black pepper and serve immediately.
