Method
Follow each step in order. Ingredient names are highlighted as you go.

Place the chicken in a large pot with the water and bring it just to a boil over medium heat. Skim the foam, then add the onion, carrot, bay leaves, and salt.

Lower the heat and simmer the broth gently at about 95°C (203°F) until the chicken is fully tender and the broth tastes rich, until the chicken reaches 74°C (165°F).

Lift out the chicken and let it cool enough to handle. Remove the meat from the bones and tear it into bite-size pieces. Strain the broth and return it to the pot.

Bring the strained broth back to a gentle simmer, add the fermented wheat bran liquid, and cook for a few minutes so the sour flavor mellows slightly.

Add the egg noodles and cook until tender. Return the shredded chicken to the pot, then stir in the garlic and black pepper, until the chicken reaches 74°C (165°F).

Stir in the sorrel and cook just until wilted and tender.

Stir in the lovage, fresh parsley, and fresh dill just before serving, then sprinkle the garnish herbs on top.
