Soup

Chile Base

Method
Follow each step in order. Ingredient names are highlighted as you go.

Combine the pork shoulder, pork stock, water, white onion, garlic, bay leaves, and salt in a large pot and bring to a gentle boil.

Lower the heat and simmer the soup until the pork shoulder is very tender and easy to pull apart.

Toast the dried guajillo chilies and dried ancho chilies in a dry pan just until fragrant, then soak them in some hot broth until softened.

Blend the softened chiles with a little soaking liquid until smooth, then strain the chile base into the pot.

Add the hominy and cumin powder, then simmer until the broth is deep red and the flavors are well blended.

Put the green cabbage, radish, dried oregano, and limes on the table.
