Method
Follow each step in order. Ingredient names are highlighted as you go.

Toast the dried guajillo chilies and dried ancho chilies in a dry pan just until fragrant.

Soak the chiles in warm orange juice until softened, then blend them with the annatto paste, garlic, distilled white vinegar, cumin powder, dried oregano, and salt until smooth.

Coat the pork shoulder with the marinade and let it rest until well seasoned.

Heat the vegetable oil in a large pan over medium-high heat and cook the marinated pork shoulder until browned, lightly charred in spots, and fully cooked, until the pork reaches 63°C (145°F), then rest it for 3 minutes.

Warm the corn tortillas on a dry griddle until soft and flexible.

Fill each tortilla with the cooked pork and top with the pineapple, white onion, and fresh coriander, until the pork reaches 63°C (145°F), then rest it for 3 minutes.
