Method

Soak the corn husks in warm water until pliable, then drain well.

Simmer the chicken thigh in the salsa over gentle heat until tender enough to shred and the chicken reaches 74°C (165°F).

Shred the chicken and return it to the salsa so the filling stays moist.

Beat the pork lard until light and fluffy, then mix in the masa harina, baking powder, and salt.

Add the chicken stock little by little until the dough is soft, airy, and easy to spread.

Spread the dough over the softened corn husks, spoon the chicken filling down the center, then fold the husks to enclose the tamales.

Arrange the tamales upright in a steamer over gently simmering water and steam until the dough is firm and pulls away from the husk, keeping the water near 100°C (212°F).
