    Cook the white rice with the water until fluffy, then keep it warm.

    Stir the corn starch with the water until smooth, then mix in the soy sauce and oyster sauce.

    Heat part of the vegetable oil in a pan over medium-high heat, about 190°C (375°F). Add the garlic and cook briefly.

    Add the chicken breast and stir-fry until nearly cooked through, until the chicken reaches 74°C (165°F).

    Add the mushroom, carrot, and green peas and cook until the vegetables are tender-crisp.

    Pour in the sauce and cook until glossy and lightly thickened.

    In a separate pan, heat the remaining vegetable oil to about 170°C (340°F) and fry the eggs until the whites are set and the yolks are still soft or just set, as you prefer, until the whites and yolks are set.

    Place a fried egg in each bowl, spoon in some stir-fry, pack the bowl with white rice, then invert onto a plate. Finish with the scallion, until the whites and yolks are set.
