- 45mlVegetable Oil
- 15gGarlic (crushed)
- 120gOnion (sliced)
- 320gChicken Breast (julienne)
- 2pcsEgg (beaten)
- 150gCarrot (julienne)
- 200gGreen Cabbage (finely chopped)
- 150gBean Sprouts

- 80gScallion (white and light-green parts, thinly sliced)
Garnish
- 20gScallion (green tops, thinly sliced)
Sauce
- 55mlSoy Sauce
- 30mlOyster Sauce
- 10mlSesame Oil
- 5gSalt
- 2gBlack Pepper

Method
Follow each step in order. Ingredient names are highlighted as you go.

Bring the water to a boil, cook the egg noodles until just tender, then drain and rinse them well.

Mix the soy sauce, oyster sauce, sesame oil, salt, and black pepper in a small bowl.

Heat a wok over high heat to about 200°C (390°F), then add the vegetable oil.

Add the garlic and onion and stir-fry briefly until fragrant.

Add the chicken breast and cook until nearly done.

Push the chicken to one side, pour in the eggs, and scramble until just set.

Add the carrot and green cabbage and stir-fry until slightly softened.

Add the cooked egg noodles and the sauce, then toss until the noodles are evenly coated and hot.

Stir in the bean sprouts and the white and light-green scallion slices, then serve immediately with the green scallion tops.
