- 25mlVegetable Oil
- 160gOnion (finely chopped)
- 15gGarlic (crushed)
- 10gRed Chili (finely chopped)
- 5gFresh Thyme
- 450gTomato (finely chopped)
- 150mlWater
- 7gSalt
- 2gBlack Pepper

Method

Heat the vegetable oil in a wide pan over medium heat, about 160°C (320°F). Add the pork sausage and cook until lightly browned, then remove to a plate.

Add the onion to the same pan and cook until softened.

Stir in the garlic, red chili, and fresh thyme and cook briefly until fragrant.

Add the tomato and water and simmer until the tomatoes break down and the sauce thickens.

Return the pork sausage to the pan, season with the salt and black pepper, and simmer gently until the sausages are fully cooked and the sauce is rich, and cook until the sausage is piping hot throughout.
