Vegetables
- 200gCarrot (julienne)
- 200gGreen Bean (julienne)
- 250gCauliflower (cut into small florets)
- 1lWater
Pickling
- 50mlVegetable Oil
- 8gMustard Seeds
- 12gGarlic (crushed)
- 10gGreen Chili (finely chopped)
- 5gTurmeric Powder
- 8gSalt
- 80mlDistilled White Vinegar

Bring the water to a boil. Briefly blanch the carrot, green beans, and cauliflower until just tender but still crisp, then drain thoroughly.

Heat the vegetable oil over medium heat to about 170°C (340°F). Add the mustard seeds and let them begin to pop.

Add the garlic and green chili and cook briefly until fragrant.

Add the blanched vegetables, then stir in the turmeric powder and salt.

Pour in the distilled white vinegar and toss until everything is evenly coated.

Let the relish cool completely before serving so the flavors settle. Cool promptly and refrigerate in a clean covered container.
