Method

Place the sweet potato in a saucepan, cover with the water, and simmer until completely tender. Drain well and mash until smooth.

Mix the warm sweet potato with the glutinous rice flour and white sugar. Add the water gradually and knead until soft, smooth, and able to hold its shape.

Divide the dough into evenly sized pieces and roll them into balls.

Roll each ball in the sesame seeds, pressing gently so the coating adheres.

Heat the vegetable oil to 170°C (340°F). Fry the balls in small batches, turning them often, until evenly golden and cooked through.

Drain briefly and let the sesame balls cool slightly before serving.
