Method

Preheat the oven to 220°C (425°F). Pat the lamb shoulder dry and place it in a roasting pan.

Mix the garlic, cumin powder, paprika, black pepper, salt, and vegetable oil into a thick paste.

Rub the paste all over the lamb shoulder, pressing it well into the surface.

Roast the lamb until the outside is well browned, then lower the oven to 160°C (320°F).

Continue roasting until the lamb shoulder is very tender and can be pulled apart easily with a fork.

Rest the meat before carving, then serve with the lemon wedges on the side.
