- 350gOkra (trimmed)
- 120gPeanut Paste
- 60gTomato Paste
- 180gOnion (finely chopped)

- 40mlVegetable Oil

- 6gCoriander Powder
- 3gChili Powder

Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat the vegetable oil in a heavy pot over medium heat. Add the onion and cook until soft and lightly golden.

Stir in the garlic, then add the goat shoulder and brown it on all sides.

Add the tomato paste, cumin powder, coriander powder, chili powder, salt, and black pepper. Stir until the meat is well coated.

Pour in the water and bring the stew to a boil. Lower the heat, cover, and simmer until the goat is nearly tender.

Whisk the peanut paste with a ladleful of hot cooking liquid until smooth, then stir it into the stew.

Add the okra and simmer until the goat is tender and the sauce has thickened.

Bring the water to a boil in a separate saucepan. Add the white rice, cover, and cook over low heat until tender.
