Soup
- 500gCod (cut into large pieces)
- 900mlFish Stock
- 300mlWater
- 150gOnion (finely chopped)
- 12gGarlic (crushed)
- 250gTomato (finely chopped)
- 120gWhite Rice (rinsed)
- 1pcsBay Leaf
- 15gFresh Parsley (finely chopped)
- 25mlExtra Virgin Olive Oil
- 7gSalt
- 2gBlack Pepper

Method

Heat the extra virgin olive oil in a pot over medium heat. Add the onion and garlic and cook until soft.

Add the tomato, bay leaf, fish stock, and water and bring to a simmer.

Add the white rice and cook until nearly tender.

Add the cod and cook gently until it reaches 63°C (145°F).

Stir in the lemon juice, salt, and black pepper.

Remove the bay leaf.

Finish with the fresh parsley and serve immediately.
