- 350gFava Bean (soaked overnight)
- 1.5lWater
- 10gGarlic (crushed)
- 12gFresh Parsley (finely chopped)
- 45mlExtra Virgin Olive Oil
- 20mlLemon Juice
- 6gSalt
- 2gBlack Pepper

Method

Drain the soaked fava beans and place them in a pot with the water.

Bring to a boil, lower the heat, and simmer until the fava beans are very tender and easy to mash.

Drain well, reserving a little cooking liquid if needed, then mash the fava beans until thick and mostly smooth.

Stir in the garlic, fresh parsley, extra virgin olive oil, lemon juice, salt, and black pepper.

Mix until the dip is creamy but still rustic. Add a spoonful of the cooking liquid only if it feels too stiff.
