Pilaf
- 350gFonio (rinsed)
- 150gOnion (finely chopped)
- 8gGarlic (crushed)
- 200gTomato (finely chopped)
- 30mlVegetable Oil
- 600mlVegetable Stock
- 6gSalt
- 2gBlack Pepper
- 20gFresh Coriander (finely chopped)

Method

Rinse the fonio well and drain it.

Heat the vegetable oil in a saucepan over medium heat. Add the onion and cook until translucent.

Stir in the garlic and tomato, and cook until the tomatoes soften.
