- 30mlCoconut Oil
- 150gOnion (finely chopped)
- 20gGarlic (crushed)
- 15gFresh Ginger (crushed)
- 12gCurry Powder
- 6gTurmeric Powder
- 200gTomato (finely chopped)
- 15gGreen Chili (left whole)
- 10gCurry Leaf (left whole)
- 800gChicken Thigh (cut into pieces)
- 250mlWater
- 500mlCoconut Milk
- 12gSalt
- 20mlLime Juice

Method

Heat the coconut oil in a heavy pot over medium heat. Brown the chicken thigh in batches.

Return the chicken thigh to the pot, add the onion, and cook until soft.

Stir in the garlic, fresh ginger, curry powder, turmeric powder, tomato, green chili, and curry leaf until fragrant and the tomato softens.

Pour in the coconut milk and water.

Add the salt and bring to a gentle simmer.

Cover partially and cook for 25 to 35 minutes, until the chicken reaches 74°C (165°F).

Stir in the lime juice and simmer uncovered if needed to thicken the sauce.
