
ChamboMalawian Tomato and Onion Fish Stew
Tilapia is gently cooked in a tomato and onion sauce in a home-kitchen adaptation of Malawian chambo preparations. Chambo refers to Lake Malawi cichlids, so ordinary tilapia is identified here as a substitute rather than the same fish.

- 800gTilapia (cleaned whole)
- 150gOnion (finely chopped)
- 350gTomato (finely chopped)
- 10gGarlic (crushed)
- 30mlVegetable Oil
- 250mlWater
- 8gSalt
- 2gBlack Pepper
- 20mlLemon Juice

Method

Pat the tilapia dry and season with the salt and black pepper.

Heat the vegetable oil in a wide pot over medium heat and lightly brown the fish on both sides. Transfer to a plate.

Add the onion and garlic to the pot and cook until soft and fragrant.

Add the tomato and cook until saucy.

Pour in the water and bring to a gentle simmer.

Return the tilapia to the pot, cover, and cook gently until it flakes easily and reaches 63°C (145°F).

Finish with the lemon juice.
