- 250gRoasted Peanuts (roughly chopped)
- 200gWhite Sugar
- 60mlWater
- 2gSalt

Method

Line a baking tray with parchment and place the roasted peanuts and salt nearby so they are ready to add.

Cook the white sugar and water over medium heat without stirring until the syrup turns deep amber, about 150°C (300°F).

Remove from the heat and immediately stir in the roasted peanuts and salt.

Pour onto the lined tray and spread into a thin layer with a heatproof spatula. Take care because caramel causes severe burns.

Cool completely, then break into irregular pieces.
