Stew

    Chicken Thigh (bone-in)
  • 300g
    Okra (trimmed)
  • 180g
    Onion (finely chopped)
  • 350g
    Tomato (finely chopped)
  • 40g
    Tomato Paste
  • 10g
    Garlic (crushed)
  • 35ml
    Vegetable Oil
  • 700ml
    Water
  • 10g
    Salt
  • 2g
    Black Pepper

    Heat the vegetable oil in a heavy pot over medium-high heat. Brown the chicken thigh in batches.

    Return the chicken thigh to the pot and add the onion. Cook until softened.

    Add the tomato, tomato paste, and garlic and cook until fragrant and saucy.

    Pour in the water and season with the salt and black pepper.

    Bring to a gentle simmer, cover partially, and cook for 25 minutes.

    Add the okra and continue cooking until tender and the chicken reaches 74°C (165°F).
