Method

Heat the vegetable oil in a heavy pot over medium-high heat. Brown the chicken thigh in batches.

Return the chicken thigh to the pot, add the onion, and cook until softened.

Stir in the garlic, fresh ginger, turmeric powder, curry powder, and black pepper until fragrant.

Add the tomato, coconut milk, chicken stock, and salt. Bring to a gentle simmer.

Cover partially and cook for 25 to 35 minutes, until the chicken reaches 74°C (165°F) and the sauce has thickened slightly.

Combine the white rice and water in a saucepan and bring to a boil.

Cover, reduce the heat to low, and cook until the rice is tender and the water is absorbed.

Remove from the heat and let stand, covered, for 10 minutes.
