Method

Place the white rice in a dry heavy saucepan over medium heat.

Toast, stirring frequently, until the grains are very dark brown and smell nutty, but are not acrid or smoking.

Remove the pan from the heat and carefully pour in the water; it will steam vigorously.

Return to the heat, simmer for 10 minutes, then strain and sweeten with the brown sugar.
