- 600gBeef Chuck (cut into large cubes)
- 160gOnion (finely chopped)
- 300gTomato (chopped)
- 15gGarlic (crushed)
- 15gFresh Ginger (grated)
- 30mlVegetable Oil
- 1.2lBeef Stock
- 400mlWater
- 180gSpinach (roughly chopped)
- 80gBredes Mafana (picked over)
- 10gSalt
- 2gBlack Pepper

Method

Heat the vegetable oil in a large pot over medium-high heat. Brown the beef chuck in batches.

Return all the beef chuck to the pot and add the onion, garlic, and fresh ginger. Cook until fragrant.

Add the tomato and cook until it begins to break down.

Pour in the beef stock and water and bring to a boil, then lower to a gentle simmer.

Season with the salt and black pepper, cover partially, and simmer for 75 to 90 minutes, until the beef is tender.

Add the spinach and bredes mafana.

Simmer uncovered for 10 to 15 minutes, until the greens are tender and the broth is flavorful.
