- 180gSour Cream

Method

Preheat the broiler and position a rack about 15 cm (6 inches) from the heat. Brush a 23 cm (9-inch) ring pan with the melted unsalted butter.

Beat the softened unsalted butter with the white sugar until pale and fluffy.

Add the eggs one at a time, beating well after each addition, then mix in the sour cream and vanilla extract.

Fold in the all-purpose flour and salt just until the batter is smooth.

Spread a very thin layer of batter over the bottom of the pan. Broil for 1 to 2 minutes, until lightly browned.

Repeat with thin layers of batter, browning each layer before adding the next, until all the batter is used. Rotate the pan as needed for even color.

Cool in the pan for 15 minutes, then turn out and cool completely before slicing.
