Sausages

    Potato (peeled)
  • 220g
    Onion (finely chopped)
  • 180g
    Bacon (diced)
  • 30ml
    Sunflower Oil
  • 10g
    Salt
  • 2g
    Black Pepper

    Sausage Casings (rinsed)

    Unsalted Butter

    Preheat the oven to 200°C (400°F).

    Cook the bacon in the sunflower oil over medium heat until it begins to brown. Add the onion and cook until soft.

    Finely grate the potato into a large bowl and stir in the bacon and onion.

    Fill the sausage casings loosely with the potato mixture, leaving room for expansion, and tie or twist them into long links. Prick each link in several places with a fine skewer.
