Method

Pat the veal cutlet dry and season both sides with the salt and black pepper.

Place the all-purpose flour in one shallow dish, the beaten eggs in a second, and the breadcrumbs in a third.

Coat each piece of veal cutlet in the all-purpose flour, then the eggs, then the breadcrumbs, pressing lightly so the coating adheres.

Melt the unsalted butter in a frying pan and cook the onion for 12 to 15 minutes, until golden and sweet. Keep warm.

Add the vegetable oil and butter to a wide pan and heat over medium heat.

Fry the coated veal cutlet for 2 to 3 minutes per side, until crisp and golden and the center reaches 63°C (145°F). Rest for 3 minutes.
