Method

Put the potato in a saucepan, cover with the water, add the salt, and boil for 18 to 22 minutes, until tender. Drain and keep warm.

Melt the unsalted butter in a pan and cook the onion until soft.

Add the sour cabbage, caraway seeds, beef stock, and black pepper, then simmer gently for 20 to 25 minutes, until the cabbage is hot, tender, and well seasoned.

Heat a separate pan over medium heat and cook the bratwurst sausage for 12 to 15 minutes, turning often, until browned all over and the center reaches 71°C (160°F).
