Method

Combine the white rice, ground lamb, lamb liver, scallion, fresh parsley, fresh mint, turmeric powder, cinnamon powder, salt, and black pepper in a large bowl.

Fill the sausage casings loosely with the rice mixture, leaving room for the rice to expand, then tie the ends securely.

Heat the extra virgin olive oil in a wide pot over medium heat. Add the onion and cook until soft, then stir in the garlic.

Add the tomato paste and tomato and cook until the mixture thickens slightly.

Pour in the meat stock, add the salt, and bring to a boil.

Lower the sausages into the broth, reduce to a gentle simmer, and cook for 60 to 75 minutes, until the rice is tender and the center of each sausage reaches 71°C (160°F).

Lift the sausages out carefully and serve them with the tomato broth spooned over.
