- 500gSweet Potato Leaf (finely chopped)
- 400gGround Beef
- 600mlWater
- 2pcsBouillon Cube

- 200gTomato (finely chopped)
- 10gGarlic (crushed)
- 1pcsScotch Bonnet Chili (finely chopped)

Method

Heat the red palm oil in a pot over medium heat. Add the onion and cook until softened.

Add the garlic and scotch bonnet chili and cook briefly. Stir in the tomato and cook until it softens into the oil.

Add the ground beef and cook for 8 to 10 minutes, until browned and the meat reaches 71°C (160°F).

Add the sweet potato leaf and stir until the leaves begin to soften.

Pour in the water and add the bouillon cubes. Cover and simmer for 25 to 30 minutes, until the greens are tender and the stew is thick.
