Sauce

Method

Heat the vegetable oil in a heavy pot over medium heat. Add the onion and cook until soft.

Add the garlic and cook briefly, then stir in the red bell pepper and tomato. Cook until the vegetables break down.

Stir in the tomato paste and cook until it darkens slightly and the oil begins to separate from the sauce.

Add the bay leaves, dried thyme, curry powder, salt, and black pepper.

Pour in the chicken stock and bring it to a simmer. Add the parboiled rice and stir well.
