- 60gFresh Ginger (crushed)
- 200gWhite Sugar
- 2lWater
- 4gCream of Tartar
- 1gActive Dry Yeast
- 60mlLemon Juice

Method

Bring the water to a brief boil and stir in the white sugar until dissolved.

Add the fresh ginger and cream of tartar, then cool the mixture to below 30°C (86°F).

Stir in the lemon juice and active dry yeast.

Cover loosely in a clean nonreactive container and ferment at room temperature for 8 to 12 hours, until lightly fizzy.

Strain if desired, transfer to clean plastic bottles without overfilling, and refrigerate immediately at 4°C (40°F) or below. Do not leave sealed glass bottles at room temperature.

Open carefully, keep refrigerated, and serve cold within several days.
