- 300gSugar Bean (dried, sorted and rinsed)
- 400gHominy (cooked and rinsed)
- 1.6lWater
- 25mlVegetable Oil
- 150gOnion (finely chopped)
- 300gTomato (finely chopped)
- 10gGarlic (crushed)
- 8gSalt
- 2gBlack Pepper

Method

Soak the sugar beans in plenty of cold water in the refrigerator for several hours or overnight, then drain and rinse.

Place the soaked sugar beans in a pot with fresh water and bring to a gentle boil.

Lower the heat and simmer for 60 to 75 minutes, until the beans are beginning to soften.

Add the hominy and continue cooking for 15 to 20 minutes, until the beans are fully tender and the hominy is hot.

Meanwhile, heat the vegetable oil in a pan over medium heat.

Add the onion and cook until soft, then stir in the garlic.

Add the tomato and cook until the mixture thickens into a sauce.
