    Preheat the oven to 220°C (425°F). Toss the potato with the extra virgin olive oil and salt, then spread it on a tray in a single layer.

    Roast for 30 to 35 minutes, turning once, until the potato is tender inside and crisp and golden at the edges.

    Warm the extra virgin olive oil in a pan over low heat and add the garlic.
