    Makrut Lime Leaf (thinly sliced)

    Birds Eye Chili (finely chopped)

Dressing

    Lime Juice
  • 25ml
    Fermented Fish Sauce

    Cook the jasmine rice with the coconut milk, water, curry paste, and salt for 15 to 18 minutes, until the grains are tender and the mixture is quite dry.

    Spread the rice on a tray and bake at 180°C (350°F) for 25 to 30 minutes, until the surface feels dry and firm enough to break into small clumps.

    Pan-fry the rice clumps in the vegetable oil for 8 to 10 minutes, turning as needed, until crisp and golden. Drain and let them cool.

    Mix the lime juice and fermented fish sauce in a small bowl.

    Combine the crisp rice with the fermented pork sausage, shallot, fresh mint, fresh coriander, makrut lime leaves, and bird's eye chili.
