- 350gWhite Bean (dried, sorted and rinsed)
- 1.7lWater
- 250gSmoked Sausage (sliced)
- 150gOnion (finely chopped)
- 120gCarrot (finely chopped)
- 30mlVegetable Oil
- 30gTomato Paste
- 5gPaprika
- 2pcsBay Leaf
- 10gSalt
- 3gBlack Pepper

Method

Place the white beans and water in a large pot, bring to a boil, then reduce to a gentle simmer. Skim any foam that rises.

Simmer partly covered for 75 to 90 minutes, until the beans are beginning to soften.

Heat the vegetable oil in a skillet over medium heat. Add the onion and carrot and cook until softened.

Add the smoked sausage and cook until lightly browned, then stir in the tomato paste and paprika and cook briefly.

Stir the sausage mixture and bay leaves into the beans and continue simmering until the beans are fully tender and the broth is creamy.

Season with the salt and black pepper, adding hot water only if needed to keep the beans covered.

Remove the bay leaves and serve hot.
