- 400mlTomato Sauce

Method

Preheat the oven to 190°C (375°F).

Heat the vegetable oil in a skillet over medium heat. Add the onion and cook until softened.

Add the ground beef and cook, breaking it up, until it loses its raw color.

Stir in the white rice, fresh parsley, salt, and black pepper, then remove from the heat.

Fill each bell pepper with the meat mixture and arrange them upright in a baking dish.

Whisk the tomato paste into the tomato sauce and water until smooth.

Pour the sauce around the peppers, not directly over the tops.

Cover and bake for about 50 minutes, then uncover and continue baking until the peppers are tender, the rice is fully cooked, and the center of the filling reaches 71°C (160°F).

Let the peppers rest briefly before serving with some of the sauce spooned over them.
