    Combine the ground beef, ground lamb, garlic, salt, black pepper, and paprika in a large bowl.

    Add the baking soda and sparkling water, then knead the mixture until it feels sticky and well bound.

    Cover and refrigerate the mixture for 30 minutes so it firms and the seasoning distributes evenly.

    Shape the meat into small sausage-like logs with damp hands.

    Cook the sausages on a very hot grill or skillet, turning often, until evenly browned and the centers reach 71°C (160°F).

    Warm the somun bread briefly in the oven at 200°C (400°F).
