    Season the tilapia with the salt and black pepper.

    Heat the vegetable oil in a wide pan over medium heat. Lightly brown the tilapia, then transfer it to a plate.

    Add the onion and cook until soft. Stir in the garlic and fresh ginger and cook until fragrant.

    Add the tomato, turmeric powder, and curry powder and cook until the tomato forms a thick sauce.

    Pour in the coconut milk and season with the salt and black pepper.

    Return the tilapia to the pan and simmer gently until it flakes easily and reaches 63°C (145°F).

    Squeeze over the lime just before serving.
