Method
Follow each step in order. Ingredient names are highlighted as you go.

Place the horse sausage in a pot, cover with the water, and add the bay leaves.

Bring the water slowly to a bare simmer. Prick the casing only if the package directions recommend it, then cook gently according to the manufacturer’s directions until the center is fully cooked.

Lift out the horse sausage and rest it for 10 minutes before slicing. Discard the bay leaves and cooking water.

Serve warm or cool promptly and refrigerate.
