Method

Line a sieve with clean cloth, add the plain yogurt, cover, and drain in the refrigerator for 12 hours until very thick.

Mix the drained plain yogurt with the salt until evenly seasoned.

Shape into small compact balls and place them on a parchment-lined tray.

Dry in a 90°C (195°F) oven until firm and dry on the surface, turning once. Do not treat this home version as shelf-stable.

Cool completely, refrigerate in a covered container, and eat within a few days.
