Method

Heat the vegetable oil in a wide pan to 180°C (350°F). Fry the eggplant and cauliflower in batches until lightly golden, then drain them well.

Heat the vegetable oil in a heavy pot over medium heat. Add the chicken thigh and brown lightly on both sides.

Add the onion and cook until softened, then stir in the tomato, tomato paste, baharat, turmeric powder, salt, and black pepper. Cook until the tomatoes break down and coat the chicken.

Arrange the fried eggplant and cauliflower neatly over the chicken.

Spread the basmati rice evenly over the vegetables and season with the salt. Pour in the hot chicken stock carefully so the layers stay in place.

Bring the pot to a gentle boil, cover, and cook over low heat until the basmati rice is tender, the liquid is absorbed, and the chicken thigh reaches 74°C (165°F).

Rest the pot off the heat for 10 minutes, then place a large platter over the pot and invert it carefully.

Lift off the pot slowly so the rice, vegetables, and chicken hold their shape.
