Method

Preheat the oven to 200°C (400°F).

Rub the chicken with the salt, black pepper, and extra virgin olive oil. Arrange the pieces in a roasting pan and roast until browned and the thickest pieces reach 74°C (165°F).

Place the onion, sumac, and extra virgin olive oil in a wide pan over medium-low heat. Cook slowly until the onions are very soft, silky, and deeply flavored but not browned.

Warm the pita bread until pliable, then spread the sumac onions over the bread.

Arrange the roasted chicken over the onions and spoon the pan juices over the top.

Toast the pine nuts in a dry pan until golden, then scatter them over the top before serving.
