Method

Cover the chickpeas with the cold water and soak them in the refrigerator for at least 8 hours, then drain and dry well.

Pulse the chickpeas with the onion, garlic, fresh parsley, and fresh coriander until coarsely ground. Mix in the cumin powder, coriander powder, baking soda, and salt.

Rest the mixture for 15 minutes so it firms up.
