    Whisk the eggs, dashi stock, soy sauce, mirin, and white sugar together until smooth.

    Heat a rectangular or small nonstick pan over medium-low heat and lightly coat it with the vegetable oil.

    Pour in a thin layer of egg mixture and cook until the surface is almost set so each layer is fully set before rolling.

    Roll the omelet toward one side of the pan, brush the empty part of the pan with more vegetable oil if needed, and pour in another thin layer of egg mixture.
