Method

Warm the dashi stock in a saucepan over medium heat until it is steaming but not boiling, about 90°C (195°F).

Add the wakame seaweed and let it soften for a few minutes.

Add the firm tofu and heat gently until warmed through, keeping the soup below a boil.

Place the miso paste in a small bowl, add a little hot broth, and stir until smooth. Return it to the pan and stir gently to combine.

Divide the soup into bowls and finish with the scallion just before serving.
