Noodles

    Soba Noodles
  • 2l
    Water
  • 300g
    Ice

Sauce

  • 300ml
    Dashi Stock
  • 90ml
    Soy Sauce
  • 60ml
    Mirin

Garnish

  • 2pcs
    Nori Seaweed (cut into thin strips)

    Scallion (finely chopped)

    Wasabi Paste

    Combine the dashi stock, soy sauce, and mirin in a small saucepan and bring just to a simmer, then cool completely and chill.

    Bring the water to 100°C (212°F) in a large pot and cook the soba noodles until just tender.

    Drain the noodles and rinse them thoroughly under cold running water to remove excess starch.

    Use the ice to chill the noodles until they are very cold, then drain well.

    Arrange the noodles on plates and top with the nori seaweed.

    Serve with the chilled sauce and the scallion and wasabi paste on the side.
